The Gastronomy of Murcia

The location of this province has a lot to do with its main ingredients, many of them fish as the mojamas original from the Islamic Iberia, because a big part of this region has the Mediterranean sea on its west.
Whenever in Murcia you have to try the Migas, a hot dish made with breadcrumbs or flour, depending on the cook, really easy to make. The base of the dish is the bread, oil and garlic, but it can be completed with chorizo, battered sardines, anchovies, bacon, and even some cucumber, grapes or melon. It seems quite an strange mix but it tastes delicious.
A main ingredient in many of the dishes from Murcia is the pimentón, sweet pepper or paprika, a spice made from grinding the dried peppers until turning them into a dusty substance. You will find it in chorizos, stews, fried eggs with potatoes, shoulder of pork and many more.
Then we have the dried broad beans or michirones, a very tasty legume that can be cooked with ham, garlic, pimentón, and can become a gorgeous dish to share with friends or in a bar having some beers.
